Compared to higher-end watch movements, is the Seiko calibre 7s26 more simple in terms of structural complexity, or is it as equally complex but just lacks the external decorations?

7s26 is a fine movement and has proved itself very reliable. It is not a fast beat movement and runs at 21600 VPH . It is unusually, not hand windable and winds from the rotor in only one direction. Its simplicity is probably both its charm and the reason for its reliability.
There are very many more sophisticated movements, even in the realm of those termed " simple movements" . Decoration aside, such things as more efficient winding would already be an improvement.
I would put it on the level of Miyota 8215 but I would expect it to be running many years longer.
