I would perhaps organize these in some priority order or maybe categorize them? It's a little daunting in a giant list. :)

Finish is another good one to look at (brushed/polished in the right way in the correct places).

Crystal material (mineral, sapphire, plexi) and shape as well.

Sound and how freely the bezel spins. some are tight and have a certain sound vs others.
Lume quality, and how its applied. some lume is bubbled up on rep when the gen is level to the indices (SMP-Cr for example on a few of the factory reps)
Bezel. the pearl is ususally a big tell how its set and quality of the ring around the setting
Movements are the ultimate tell, if its even the correct movement. Finish on main plate determining grade of movement, pearling of the movement surface.
Bracelet and clasp this is a touch feel thing since its hard to describe
